This weekend flew by on Sunday we went to a event in Wilmington called Touch a Truck. Touch a Truck is an educational community event that provides children with a hands-on opportunity to see and touch heavy machinery and meet the people who build, protect and serve the Wilmington community. Since Liam loves cars and trucks I knew this was perfect for him! We had a great time checking out all the different trucks and seeing a helicopter land! He also went into a bouncy house for the first time and loved it!! Below is a recipe for blueberry lemon muffins that I made on Sunday Morning. Liam does not eat blueberries but will eat these!

Lemon Blueberry Muffins-from Happy Herbivore
1 tbsp raw sugar
1 tbsp agave nectar
1 tbsp non-dairy milk
¼ tsp baking powder
1½ tbsp frozen blueberries, rinsed
¼ tsp lemon extract
Instructions:
Preheat oven to 350F. Grease a single muffin cup (or use a Reynolds tinfoil liner) and set aside. Add all ingredients in order to a small mixing bowl, then stir until completely combined. Transfer to muffin cup and bake 15-20 minutes, or until a toothpick inserted into the center comes out clean.
